  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 4 cloves garlic
  • 1/2 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh chives

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Toss chicken cubes with olive oil, Cajun seasoning, and paprika until evenly coated.
  3. In a skillet over medium-high heat, cook the chicken for 6-8 minutes until golden brown. Remove and set aside.
  4. Melt butter in the same skillet over medium heat; add garlic and sauté until fragrant.
  5. Whisk in flour; cook for 1-2 minutes until smooth. Gradually whisk in milk and cream; bring to a simmer.
  6. Reduce heat; simmer for 5-7 minutes until slightly thickened.
  7. Stir in mozzarella and Parmesan until melted; season with salt and pepper.
  8. Combine cooked pasta and chicken with sauce; toss to coat evenly.
