  • 1 tablespoon olive oil or 1/4 cup water
  • 1 large white onion, sliced
  • 6 cloves garlic, minced
  • 2 1/2 lbs. fresh tomatoes (roma, plum, or tomatoes on the vine)
  • 1/2 cup basil leaves (about 1012 large leaves) or 2 teaspoons dried
  • 1/2 teaspoon dried oregano
  • 2 cups low-sodium vegetable broth
  • Salt and pepper to taste
  • Vegan cream for serving

Instructions

  1. Prepare your ingredients: Slice the onion and mince the garlic. Quarter the tomatoes.
  2. In a heavy-bottomed pan over medium heat, heat olive oil or water. Sauté the onion until translucent (about 7 minutes), then add minced garlic and cook for another minute.
  3. Add the prepared tomatoes, basil, oregano, salt, pepper, and vegetable broth to the pan.
  4. Bring to a boil, cover the pot, and reduce heat to simmer for about 15 minutes.
  5. Allow the soup to cool slightly before blending until smooth with an immersion blender.
  6. Taste and adjust seasoning if needed.
  7. Serve hot with a drizzle of vegan cream and garnish with fresh basil.
