  • 3 large gold potatoes (peeled and diced)
  • 30 oz pinto beans (rinsed and drained)
  • 15 oz can whole kernel corn (drained)
  • 15 oz can diced tomatoes (undrained)
  • 14 oz can Rotel (undrained)
  • 10 oz bag frozen mixed vegetables
  • 2 cups beef broth
  • 2 tablespoons brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground black pepper
  • 2 teaspoons freshly chopped parsley (for garnish)

Instructions

  1. In a large skillet over medium-high heat, brown the ground beef while crumbling it until fully cooked. Add the diced onions and minced garlic; sauté for an additional 2 minutes until fragrant.
  2. Transfer the cooked beef mixture to a slow cooker. Add in the pinto beans, corn, diced tomatoes, Rotel, mixed vegetables, beef broth, brown sugar, smoked paprika, onion powder, kosher salt, and black pepper.
  3. Cover and cook on high for 3-4 hours or low for 6-8 hours until all vegetables are tender.
  4. Garnish with freshly chopped parsley before serving hot.
