Cucumber Shrimp Salad is a refreshing and vibrant dish that’s perfect for warm weather gatherings or a light dinner. With tender shrimp, crunchy cucumbers, and a tangy lime dressing, this salad is not only delicious but also visually appealing.

  • 2 pounds peeled and deveined shrimp
  • 1 English cucumber, diced
  • 3 green onions, sliced
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • Juice and zest of 1 large lime
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon Dijon mustard
  • 1 garlic clove, minced
  • Salt to taste

Instructions

  1. In a mixing bowl, combine mayonnaise, sour cream, lime juice and zest, dill, mustard, garlic, and salt until well mixed. Set aside.
  2. Boil a large pot of water; cook shrimp for 2 to 3 minutes until pink. Remove shrimp with a skimmer and place them in an ice water bath to cool.
  3. Once cooled, chop the shrimp into bite-sized pieces.
  4. In a mixing bowl, combine chopped shrimp with diced cucumber and green onions. Add the dressing and mix gently.
