  • 1 lb lamb, thinly sliced
  • 2 tablespoons whole cumin seeds
  • 2 teaspoons sichuan peppercorns
  • 1 teaspoon whole coriander seeds
  • 1 tablespoon apple vinegar (or dry apple juice)
  • 1 teaspoon salt
  • 1 teaspoon peanut oil (or vegetable oil)
  • 2 teaspoons cornstarch
  • 1/2 cup homemade chili oil (and more to taste)
  • 3 tablespoons chinkiang vinegar
  • 4 teaspoons light soy sauce
  • 4 teaspoons dark soy sauce
  • 8 cloves garlic, minced
  • 2 inches ginger, minced
  • 1 red onion, thinly sliced
  • 1 hot green chili, sliced
  • 1/2 bunch cilantro, chopped

Instructions

  1. Prepare your noodle dough and set water to boil.
  2. Marinate the lamb with spices, salt, vinegar, oil, and cornstarch for 10 minutes.
  3. Stir-fry lamb in batches over high heat until browned.
  4. Sauté garlic, ginger, onion, and green chili until fragrant.
  5. Combine lamb with sautéed vegetables and sauces in the wok.
  6. Cook the noodles according to instructions; drain well.
  7. Toss cooked noodles with the lamb mixture, garnish with cilantro, and serve.
