Instructions

  1. Preheat the oven to 350°F (175°C). Mix crushed Oreos with melted salted butter and optional espresso powder, and press into the bottom of a springform pan.
  2. Beat softened cream cheese with granulated sugar until smooth. Add coffee extract, eggs one at a time, heavy cream, cold brew coffee, lemon juice, salt, and optional flour. Mix until fully incorporated.
  3. Pour the filling over the crust in the springform pan. Bake in preheated oven for about 85 minutes or until set but still slightly jiggly in the center. Turn off the oven and let it cool inside with the door ajar for an hour.
  4. Remove from oven and refrigerate for at least 8 hours or overnight.
  5. Prepare ganache by heating heavy cream until simmering, then pouring over chopped bittersweet chocolate. Stir until smooth and slightly cool before pouring over chilled cheesecake.
  6. Top your cheesecake with whipped cream, chocolate curls, or chocolate-covered espresso beans before serving.
