  • 80 g brown sugar
  • 90 g cold unsalted butter
  • 400 g dried figs
  • 1 cup water
  • 40 g granulated sugar
  • 3 tbsp fresh lemon juice
  • 170 g cream cheese
  • 1 tsp vanilla extract
  • 1 large egg

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a mixing bowl, combine flour, brown sugar, and salt; mix in cold butter until crumbly. Press into the bottom of the baking dish.
  3. In a saucepan, combine dried figs, water, granulated sugar, and lemon juice; simmer for about 10 minutes until soft.
  4. Allow fig mixture to cool slightly, then blend with cream cheese, egg, vanilla extract, and remaining sugar until smooth.
  5. Pour the fig filling over the base and bake for approximately 30 minutes or until set.
  6. Let cool before cutting into bars.
