  • 4 pieces uncooked turkey bacon, diced
  • 1 small white onion, finely diced
  • 1 jalapeno, stemmed, seeded and diced
  • 4 garlic cloves, minced
  • 1 (12-ounce) bottle dark beef broth
  • 4 (15-ounce) cans pinto beans, rinsed and drained
  • 1 tablespoon brown sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon cumin
  • 1 tablespoon fresh lime juice
  • 1/4 cup chopped fresh cilantro

Instructions

  1. In a large sauté pan over medium-high heat, cook the diced turkey bacon until crispy. Remove and set aside.
  2. Retain one tablespoon of the grease in the pan. Sauté the onion and jalapeno until soft, then add minced garlic and cook until fragrant.
  3. Stir in beef broth, pinto beans, brown sugar, oregano, chili powder, salt, and cumin. Bring to a simmer.
  4. Reduce heat to medium-low and let simmer uncovered for about 15 minutes.
  5. Stir in crispy turkey bacon and fresh lime juice before serving with chopped cilantro on top.
