  • 1 can (13.5 fl oz / 400ml) coconut milk
  • 23 tablespoons red curry paste
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or sugar
  • 1 teaspoon sesame oil
  • 1 large garlic clove
  • 1 small cube of ginger
  • 1620 frozen vegetable dumplings
  • 2 bok choy bulbs
  • 1 zucchini or any vegetable of choice

Instructions

  1. Preheat oven to 400°F (200°C). In a 12 x 8 inch baking dish, whisk together coconut milk, red curry paste, soy sauce, rice vinegar, honey, and sesame oil until smooth. Grate in garlic and ginger.
  2. Add chopped bok choy and sliced zucchini to the dish and stir until coated in the broth mixture.
  3. Place frozen dumplings into the dish without overlapping. Spoon some broth over each dumpling and cover with foil.
  4. Bake for 20 minutes covered, then remove foil and bake for an additional 5-10 minutes until bubbling and slightly crispy on top.
