- 4 fresh unwaxed oranges
- 1 cup granulated sugar
- 1 cup water
- Pinch of salt
- 1/2 teaspoon vanilla extract
- Optional: Spices (cinnamon stick, star anise, cloves) for added flavor
- Thoroughly wash the oranges and peel them carefully to remove the bright orange skin without the white pith. Slice into thin strips.
- Place the sliced peels in cold water; bring to a boil and simmer for 10 minutes. Drain and repeat 2-3 times to reduce bitterness.
- In a pot, combine water and sugar; bring to a gentle boil until sugar dissolves completely. Add salt, vanilla extract, or spices if desired.
- Add the boiled peels to the syrup. Cook over low heat for about 45 minutes until the peels are translucent and syrup thickens.
- Transfer peels onto a cooling rack lined with parchment paper. Allow to dry for several hours until tacky but not wet.
