  • 2 medium zucchini
  • 2 medium yellow squash
  • 4 tablespoons chopped fresh basil
  • 2 tablespoons thinly sliced green onion
  • 1/2 teaspoon dried thyme
  • 3/4 teaspoon garlic powder
  • 1 cup grated mozzarella cheese
  • 1/2 cup coarsely grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 350°F (180°C). Lightly grease an 8" x 8" or 8" x 11" baking dish with olive oil or non-stick spray.
  2. Slice the zucchini and yellow squash into half-moon shapes.
  3. Chop the fresh basil and slice the green onions.
  4. In a mixing bowl, combine the sliced vegetables with basil, green onions, thyme, garlic powder, half of each cheese, salt, and pepper. Mix until well coated.
  5. Pour the mixture into the prepared baking dish and bake uncovered for about 25-30 minutes until tender.
  6. Remove from the oven and sprinkle remaining cheese on top before returning it to the oven for an additional 10-15 minutes until golden and bubbly.
