  • 8 oz medjool dates, chopped
  • 1 cup boiling water
  • 3/4 cup boiling milk
  • 1 tsp baking soda
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 2 tsp vanilla
  • 3 large eggs
  • 1 1/4 cup all-purpose flour
  • 1/2 cup Dutch processed cocoa powder
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 8 tbsp unsalted butter
  • 3/4 cup brown sugar
  • 1 cup cream
  • 1 cup milk
  • 200g dark chocolate
  • 1/2 tsp salt
  • Optional: 1–2 tbsp cocoa powder

Instructions

  1. Soak chopped medjool dates in boiling water for about 10 minutes.
  2. In a mixing bowl, whisk together softened butter, brown sugar, vanilla, and eggs until combined; add soaked dates and their liquid.
  3. In another bowl, mix together flour, cocoa powder, baking powder, baking soda, and salt. Gradually fold into the wet mixture until just combined.
  4. Pour batter into a greased baking dish and bake at 350°F (175°C) for about 25 minutes or until a toothpick comes out clean.
  5. For the sauce, melt butter and brown sugar in a saucepan over medium heat; stir in cream and milk then add dark chocolate until smooth.
  6. Serve warm pudding drizzled with chocolate toffee sauce.
