  • 1 pound lean ground turkey (or lean ground beef)
  • 2 medium zucchinis, cubed
  • 1 bell pepper, diced
  • ½ white or yellow onion, diced
  • 5 ounces fresh baby spinach
  • 1½ tablespoon olive or avocado oil
  • 2 tablespoons tomato paste
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • ½ teaspoon dried oregano
  • ¼ teaspoon paprika
  • 1 teaspoon garlic (minced)
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried basil
  • ½ cup water

Instructions

  1. In a large skillet over medium-high heat, brown the ground turkey (or beef) until cooked through. Break it up with a spatula as it cooks.
  2. Add seasonings (salt, pepper, chili powder, oregano, paprika, garlic) and sauté for another minute until fragrant.
  3. Remove the meat mixture from the skillet and set aside. In the same skillet, heat oil and sauté zucchini, onion, and bell pepper until tender (about 5–10 minutes).
  4. Return the meat to the skillet along with water, tomato paste, and spinach. Stir to combine and simmer for 5–10 minutes until heated through.
