  • 3/4 lb top sirloin cubes
  • Salt and pepper to taste
  • 2 cups apple cider
  • 1/2 cup beef broth
  • 1 large onion (chopped)
  • 2 medium carrots (peeled and chopped)
  • 6 large potatoes
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese (shredded)
  • 3 tablespoons chives

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, heat olive oil and butter over medium-high heat. Season sirloin with salt and pepper and brown in the skillet for about 6-8 minutes.
  3. Add chopped onion and carrots; sauté for an additional 4-5 minutes until softened.
  4. Stir in flour, then add apple cider and beef broth, bringing to a boil.
  5. Transfer mixture to an oven-safe pan, cover, and bake for about 1 – 1½ hours until meat is tender.
  6. While the stew bakes, boil peeled potatoes until tender, then mash with milk, sour cream, cheddar cheese, and chives until smooth.
  7. Serve stew over mashed potatoes.
