  • 2 medium oranges (about 400 g), boiled and pureed
  • 150 g almond meal
  • 100 g shelled pistachios, finely ground
  • 6 large eggs
  • 200 g granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon fine sea salt

Instructions

  1. Preheat the oven to 170°C (340°F) and prepare a springform pan by lining it with parchment paper.
  2. Boil the oranges in water for about 60 minutes until tender, then puree until smooth.
  3. In a large bowl, whisk eggs and sugar until pale; stir in orange puree.
  4. Mix almond meal, ground pistachios, baking powder, and sea salt in another bowl; gently fold into the egg mixture.
  5. Pour batter into the prepared pan, smoothing the top.
  6. Bake for 50–60 minutes until set; check doneness with a skewer.
  7. Allow to cool before removing from the pan and serving.
