  • 3 carrots (sliced)
  • 2 garlic cloves (minced)
  • 2 cups beef broth

  • 2 tablespoons tomato paste
  • 3 tablespoons olive oil

  • Bouquet garni (thyme, bay leaves, parsley)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season beef chunks with salt and pepper; brown them in batches until well-seared. Remove from pot.
  3. In the same pot, sauté onions, carrots, and garlic until the onion is translucent.
  4. Sprinkle flour over veggies, stirring well to coat and deglaze any bits stuck to the pot.
  5. Return beef to the pot; add tomato paste and bouquet garni. Bring to a boil, then reduce heat and cover. Simmer gently for about 2 hours.
  6. In the last 30 minutes, sauté mushrooms in a separate pan until golden; add them to the stew.
