  • 2 tbsp Dijon mustard

  2. Season beef cubes with salt and black pepper. Sear in olive oil until browned; set aside.
  3. In the same pot, melt butter and caramelize onions with brown sugar until golden.
  4. Add garlic, then sprinkle flour over the onions and stir well.
  5. Gradually pour in beef broth while stirring; add seared beef and bay leaves.
  6. Cover and slow cook in a preheated oven at 320°F for about 1½ hours.
  7. Meanwhile, toast baguette slices brushed with olive oil at 375°F until golden.
  8. Assemble by spreading Dijon mustard on toasted bread and topping with cheeses before broiling until melted.
  9. Serve in bowls topped with cheesy bread and fresh thyme.
