  • 2 large yellow onions, thinly sliced
  • 1/3 cup grated Parmesan cheese
  • 4 ounces shredded Gruyère cheese
  • 6 ounces shredded Havarti cheese
  • 1 egg
  • 5 garlic cloves, minced
  • 1 1/2 cups beef broth
  • 1 tablespoon fresh thyme
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1/3 cup almond meal or breadcrumbs
  • 1/3 cup parsley, finely chopped
  • 2 tablespoons butter
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine ground chicken, egg, Parmesan cheese, almond meal (or breadcrumbs), parsley, chopped onion, garlic, salt, and pepper until fully mixed.
  3. Form meatballs (about 1½ inches) and place on the baking sheet.
  4. Bake for 15-20 minutes until internal temperature reaches 165°F.
  5. While baking, sauté sliced onions in olive oil and butter until golden brown (about 25 minutes). Add minced garlic and cook for another minute.
  6. Pour in beef broth along with thyme, onion powder, salt, and pepper; simmer until thickened (5 minutes).
  7. Add baked meatballs to the skillet; sprinkle cheeses on top and cover until melted (3–5 minutes).
