  • 24 oz Cod (Icelandic or similar)
  • 2 cups flour (divided)
  • 1 large egg
  • 1 cup sparkling water
  • ½ cup mayonnaise
  • 4 chicken hamburger buns
  • 2 slices cheddar cheese
  • Salt
  • Pepper
  • 2 qt peanut oil (or other neutral frying oil)
  • 1 ½ tbsp Old Bay Seasoning (divided)
  • ½ tbsp paprika
  • 1 tsp turmeric
  • ½ tsp white pepper
  • ½ tsp baking powder
  • 3 tbsp dill pickle (diced)
  • 1 tbsp capers (diced)
  • 1 tbsp parsley (fresh chopped)
  • 1 tbsp lemon juice
  • 2 tsp Dijon mustard

Instructions

  1. Heat peanut oil in a heavy-bottom pan to 375°F.
  2. Prepare the tartar sauce by mixing mayonnaise, Dijon mustard, lemon juice, diced pickles, capers, and parsley; season to taste.
  3. Cut cod into portions and season with salt and pepper.
  4. Create the dry dredge by combining flour and Old Bay seasoning. For the wet batter, mix flour with spices and whisk in egg and sparkling water until smooth.
  5. Dredge each cod piece first in dry mixture, then dip in the wet batter.
  6. Fry the battered fish for about 4-5 minutes until golden brown; drain on a wire rack.
  7. Steam buns briefly for warmth before assembling with tartar sauce, fried cod, cheddar cheese, and top bun.
