  • 12 large hardboiled eggs
  • 2 tablespoons mayonnaise
  • 1 ½ tablespoons sweet pickle relish
  • 2 teaspoons Dijon mustard
  • 1 ½ cups all-purpose flour
  • 2 large eggs, beaten
  • 1 ½ cups panko breadcrumbs
  • 1 cup finely crushed butter crackers
  • oil for frying
  • thinly sliced chives for garnish

Instructions

  1. Scoop yolks from the egg whites into a bowl. Add mayonnaise, relish, mustard, salt, and pepper, then mash until smooth.
  2. Set up an assembly line with flour, beaten eggs, and panko-cracker mixture. Dredge each egg white in flour, dip in eggs, then coat with panko.
  3. Heat oil in a tall pot to 350°F. Fry breaded egg whites in batches for 2-3 minutes until golden brown. Drain on paper towels.
  4. Fill each fried egg white with yolk mixture and garnish with chives.
