  • 1 teaspoon baking powder
  • ½ cup unsalted butter, chilled and cubed
  • ½ cup cold water (adjust as needed)
  • 2 cups fresh or canned fruit (chopped)
  • ½ cup granulated sugar (to taste)
  • 1 tablespoon cornstarch
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. In a large bowl, mix flour, sugar, salt, and baking powder. Cut in the chilled butter until crumbly.
  2. Gradually add cold water until the dough forms; knead gently on a floured surface.
  3. Refrigerate the dough for at least 30 minutes.
  4. Prepare the fruit filling by combining chopped fruit with sugar and cornstarch in a saucepan. Cook over medium heat until thickened.
  5. Roll out the dough to about ⅛-inch thickness; cut into circles.
  6. Spoon filling onto each circle, fold over, and seal edges.
  7. Heat oil in a deep skillet to 350°F (175°C). Fry pies until golden brown on both sides.
  8. Drain on paper towels and dust with powdered sugar before serving.
