  • 5 oz dried red currants
  • 1/2 cup lukewarm whole milk
  • 2 tsp active dry yeast
  • 1/4 cup granulated sugar
  • 3 cups all-purpose flour
  • 1 cup ground almonds
  • 1 tspspecial occasion spice mix
  • 3/4 cup softened butter
  • 2 room temperature eggs
  • 1 tsp vanilla extract
  • 3.5 oz candied citrus peel
  • 1 cup powdered sugar (for coating)

Instructions

  1. Soak the raisins and currants in boiling water to plump them up.
  2. Combine lukewarm milk with yeast and a tablespoon of sugar; let froth for about 5-10 minutes.
  3. In a large bowl, mix flour, ground almonds,special occasion spice mix, and remaining sugar.
  4. Add the yeast mixture, softened butter, vanilla extract, and eggs to the dry ingredients; mix until combined.
  5. Fold in drained dried fruits and candied citrus peel.
  6. Knead the dough until smooth; cover and let rise in a warm place for 1-2 hours until doubled.
  7. Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
  8. Shape the risen dough into small balls (about 2 oz each) on the prepared baking sheet.
  9. Bake for 15-20 minutes until golden brown; cool on a wire rack.
  10. Roll warm cookies in powdered sugar before serving or storing.
