Ingredients

  • Chicken drumsticks
  • Olive oil
  • Garlic, minced
  • Paprika
  • Dried oregano
  • Dried thyme
  • Salt & pepper
  • Potatoes, diced into chunks
  • Red bell pepper, chopped (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine chicken drumsticks with olive oil, minced garlic, paprika, dried oregano, dried thyme, salt, and pepper. Toss until evenly coated.
  3. In another bowl, add diced potatoes (and red bell peppers if using). Drizzle with olive oil and sprinkle with paprika, salt, and pepper; toss to combine.
  4. Place seasoned chicken on top of the potatoes in a large baking dish.
  5. Roast uncovered in the oven for approximately 55 minutes until chicken is golden brown and crispy and potatoes are tender. Baste once or twice with pan juices during cooking.
