  • 1/2 cup chilled mascarpone cheese
  • 7/8 cup chilled heavy cream
  • 3 tablespoons confectioners' sugar
  • 3/4 teaspoon vanilla extract
  • Cocoa powder

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Sift together flour and instant espresso. In another bowl, whip egg whites until soft peaks form, gradually adding sugar until stiff peaks develop.
  3. Beat egg yolks and whole eggs with sugar until pale and fluffy; fold in the flour mixture followed by the whipped egg whites.
  4. Spread batter onto the baking sheet and bake for about 8 minutes until lightly golden. Cool slightly before rolling in a cocoa-dusted towel.
  5. Prepare whipped cream by beating heavy cream with confectioners' sugar and vanilla extract until stiff peaks form.
  6. Unroll cooled cake, spread mascarpone, add whipped cream filling, roll tightly without the towel, then dust with cocoa powder before serving.
