  • 2.5 lbs Yukon gold potatoes
  • 2 cups chicken broth (or vegetable broth)
  • ½ cup olive oil
  • ½ cup lemon juice
  • 5 cloves garlic (minced)
  • 1 tbsp dried oregano
  • ½ tbsp paprika
  • 1 tbsp salt

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Peel and cut the potatoes into thick wedges or cubes, then place them in a mixing bowl.
  3. Add chicken broth, olive oil, lemon juice, minced garlic, dried oregano, paprika, and salt to the bowl. Toss until well-coated.
  4. Transfer the mixture to a roasting pan and cover tightly with aluminum foil. Roast for 40 minutes.
  5. Remove from heat, toss gently, re-cover, and roast for an additional 25 minutes until fork-tender.
  6. Uncover and roast for an additional 15 minutes until browned to your liking.
