  • 1 ½ cups cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup red bell pepper, diced
  • ½ cup red onion, thinly sliced
  • ¾ cup kalamata olives, sliced
  • 1 cup feta cheese, crumbled
  • ¼ cup olive oil
  • 2 tablespoons red apple vinegar
  • Juice of half a lemon

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a small bowl, whisk together olive oil, red apple vinegar, lemon juice, Dijon mustard, dried oregano, garlic powder, salt, and black pepper until well combined.
