  • 1 cup cooked white rice (jasmine or basmati)
  • 1 chicken breast, cubed
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt & pepper to taste
  • 1 avocado, sliced
  • 1 cup cucumber, sliced
  • 1 cup cherry tomatoes, halved

Instructions

  1. Cook the rice according to package instructions. Fluff with a fork and set aside.
  2. In a skillet over medium-high heat, combine cubed chicken with olive oil, garlic powder, paprika, salt, and pepper. Cook for about 6-8 minutes until golden brown and fully cooked.
  3. While the chicken cooks, slice the avocado and cucumber; halve the cherry tomatoes.
  4. In a large bowl, arrange the rice at the bottom and layer the cooked chicken on top followed by avocado slices, cucumber pieces, and cherry tomatoes.
  5. Serve as is or drizzle with soy sauce, sesame dressing, or lemon juice for extra flavor.
