  • 1 cup cooked white rice
  • 1 cup cucumber, sliced
  • 1 cup cherry tomatoes
  • 23 lettuce leaves
  • red onion, thinly sliced
  • 1 cup plain Greek yogurt
  • 1 tbsp fresh herbs (parsley, dill, or cilantro), chopped
  • 1 tsp lemon juice
  • 1 tsp olive oil
  • Salt & pepper, to taste

Instructions

  1. Season the chicken breast with salt, pepper, and olive oil. Grill or pan-sear for 5-6 minutes per side until thoroughly cooked. Slice into strips.
  2. Cook rice according to package instructions and let it cool slightly.
  3. In a mixing bowl, combine Greek yogurt, chopped fresh herbs, lemon juice, salt, pepper, and optional chili flakes. Mix well.
  4. Prepare vegetables by slicing cucumbers and tomatoes and tearing lettuce into bite-sized pieces.
  5. Assemble the bowl by layering rice at the bottom followed by chicken strips, veggies, and a dollop of herb yogurt sauce.
