  • 4 cloves garlic
  • 3/4 cup Parmesan cheese (shredded)
  • 1/2 cup olive oil
  • 1/4 cup pine nuts
  • 1/4 cup white apple vinegar
  • 4 halibut steaks
  • Salt and pepper (to taste)

Instructions

  1. In a food processor, blend the basil, garlic, Parmesan cheese, olive oil, and pine nuts until smooth. Reserve ¼ cup for later.
  2. In a sealed bag, combine the reserved pesto and white apple vinegar. Add the halibut steaks and coat well. Refrigerate for at least 1 hour.
  3. Preheat your grill to medium-high heat.
  4. Remove halibut from marinade, drizzle with any remaining marinade, and season with salt and pepper.
  5. Grill each side for 4-5 minutes until opaque and cooked through.
  6. Brush with reserved pesto sauce before serving.
