  • 6 garlic cloves (peeled & cut into thirds)
  • 1 tablespoon + 1 teaspoon olive oil
  • 1 ½ teaspoon crushed dried rosemary
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon ground pepper

Instructions

  1. Preheat the grill to medium heat.
  2. In a large mixing bowl, combine russet potatoes, onion, and garlic. Drizzle with olive oil and toss to coat.
  3. Add crushed rosemary, smoked paprika, salt, and ground pepper; toss again until evenly coated.
  4. Prepare an X-shaped foil packet using two pieces of heavy-duty aluminum foil. Place the potato mixture in the center, wrap tightly.
  5. Grill the foil packet for 20 minutes on one side, then flip and cook for an additional 15 to 20 minutes until tender and lightly browned.
  6. Let sit for 10 to 15 minutes before carefully opening the packet.
