  • 1 1/2 pounds boneless skinless chicken thighs (or breasts)
  • 2 tablespoons olive oil
  • 3 tablespoons water
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 1 teaspoon grated garlic
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 1 cup white or brown rice
  • 1 1/2 cups water (2 cups if using brown rice)
  • 1 tablespoon chopped fresh dill
  • 1 teaspoon lemon zest
  • Salt to taste
  • 1 tablespoon fresh lemon juice

Instructions

  1. Prepare the marinade by whisking together tahini, olive oil, water, lemon juice, garlic, and spices in a glass measuring cup.
  2. Place the chicken in a freezer bag and pour the marinade over it. Seal tightly and massage the marinade into the chicken. Refrigerate for 1-4 hours.
  3. Preheat your grill to medium-high heat (400-425°F) while cooking rice according to package instructions.
  4. Grill marinated chicken for 4-6 minutes on each side until fully cooked (internal temperature should reach 165°F). Let rest for 5-10 minutes before serving.
