  • 2 medium zucchinis, sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 1 tsp dried Italian herbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil.
  2. In a large skillet over medium heat, add olive oil and sauté the chopped onion and minced garlic until fragrant (about 2 minutes).
  3. Add the ground turkey to the skillet and cook until browned, breaking it up with a spoon (5-6 minutes).
  4. Stir in the diced tomatoes along with Italian herbs, salt, and black pepper. Simmer for about 3-4 minutes.
  5. In the prepared baking dish, layer half of the sliced zucchini, then half of the turkey mixture, followed by half of the mozzarella cheese. Repeat these layers.
  6. Bake uncovered for 30-35 minutes or until bubbly and golden on top. Let cool for 5 minutes before serving.
