  • 175 g Baking spread (or unsalted butter)
  • 175 g Caster sugar
  • 3 Eggs (large)
  • 2 tsp Vanilla extract
  • 175 g Self-raising flour
  • 25 g Black food coloring
  • 200 g Butter (softened, unsalted)
  • 400 g Icing sugar
  • 1 tsp Vanilla extract
  • 12 tbsp Milk
  • Green food coloring
  • Yellow food coloring
  • 150 g Tinned custard
  • Candy eyes
  • Green sprinkles

Instructions

  1. Preheat your oven to 140C Fan/325F/Gas Mark 3 and line a cupcake tin with cases.
  2. Cream together softened baking spread and caster sugar until fluffy.
  3. Add eggs one by one along with vanilla extract, mixing well after each addition.
  4. Gently fold in self-raising flour until just combined, then mix in black food coloring.
  5. Divide batter evenly into cupcake cases and bake for 25-30 minutes. Cool completely on a wire rack.
  6. Core the cooled cupcakes and fill with tinted custard.
  7. For the frosting, beat together softened butter and icing sugar, adding vanilla extract and milk until smooth. Adjust color as desired.
  8. Pipe or spread frosting on each cupcake, then decorate with candy eyes and sprinkles.
