Instructions

  1. In a medium bowl, whisk oats, flour, baking powder, cinnamon, and salt.
  2. In another bowl, combine melted coconut oil or butter, egg, and vanilla; mix in maple syrup.
  3. Stir in dry ingredients until just combined; fold in grated carrots.
  4. Chill the dough for 30 minutes in the refrigerator.
  5. Preheat oven to 325°F (163°C). Line a baking sheet with parchment paper.
  6. Drop rounded scoops of dough onto the sheet; flatten slightly.
  7. Bake for 12-15 minutes until golden brown; let cool on the sheet for at least 15 minutes.
