Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a medium bowl, whisk together whole wheat flour, baking soda, baking powder, cinnamon, and salt.
  3. In a large bowl, whisk together the egg, honey, Greek yogurt, milk, melted oil, and vanilla extract until smooth.
  4. Gently mix the dry ingredients into the wet mixture until just combined; avoid overmixing.
  5. Fold in the diced peaches.
  6. Divide the batter evenly among muffin cups, filling each about three-quarters full.
  7. Bake for 18–22 minutes or until a toothpick inserted comes out clean.
