  • ¾ cup whole wheat or gluten-free flour
  • 1 ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tbsp coconut oil or unsalted butter, melted and cooled slightly
  • 1 large egg, room temperature
  • 1 tsp almond extract
  • ¼ cup pure maple syrup, room temperature
  • 6 tbsp unsweetened vanilla almond milk, room temperature
  • ½ cup diced peaches

Instructions

  1. In a medium bowl, whisk together oats, flour, cinnamon, nutmeg, baking powder, and salt.
  2. In another bowl, mix melted coconut oil (or butter) with the egg and almond extract. Stir in maple syrup and almond milk.
  3. Gradually combine the wet and dry mixtures until just mixed. Fold in diced peaches gently.
  4. Chill the dough in the refrigerator for 30 minutes.
  5. Preheat oven to 325°F (163°C). Line a baking sheet with parchment paper.
  6. Scoop rounded dough onto the sheet and flatten slightly. Bake for 9-12 minutes until golden around edges.
  7. Cool on the pan for about 10 minutes before transferring to a wire rack.
