  • 375g whole wheat rotini pasta
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped celery
  • 1 cup chopped red bell pepper (or cherry tomatoes)
  • 1 cup cooked frozen peas
  • 1 can (12 oz) flaked white tuna (drained)
  • 1 cup plain Greek yogurt
  • 1/2 cup light mayonnaise
  • 2 tsp lemon juice
  • 1 tsp Dijon mustard
  • Fresh dill, garlic powder, salt, and pepper

Instructions

  1. Cook the whole wheat rotini pasta according to package directions. Once done, drain and rinse under cool water to stop cooking.
  2. In a large mixing bowl, combine the cooled pasta with chopped cucumber, celery, red bell pepper, cooked peas, and flaked tuna.
  3. In another bowl, whisk together Greek yogurt, light mayonnaise, lemon juice, and Dijon mustard. Stir in chopped dill, garlic powder, salt, and pepper until well combined.
  4. Pour the dressing over the salad ingredients and mix thoroughly until evenly coated. Taste and adjust seasoning if necessary.
