  • 1 cup grated zucchini (squeezed dry)
  • 1 large egg
  • 1/4 cup olive oil (or avocado oil)
  • 1/2 cup maple syrup (or honey)
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 3/4 cups whole wheat flour (or spelt flour)

Instructions

  1. Preheat your oven to 350°F. Prepare a 9" x 5" loaf pan by lining it with parchment paper or greasing it.
  2. In a large bowl, mash the bananas until smooth. Mix in the squeezed zucchini, egg, olive oil, maple syrup, vanilla extract, cinnamon, baking powder, baking soda, and salt until well combined.
  3. Gently fold in the flour until just combined; avoid overmixing.
  4. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  5. Bake for about 50-60 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool in the pan for about 10 minutes before transferring to a cooling rack to cool completely.
