  • ¾ cup (90g) whole wheat flour or gluten free flour
  • 1 ½ tsp baking powder
  • 1 ½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • 2 tbsp (28g) coconut oil or unsalted butter, melted and cooled slightly
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • ½ cup (120mL) pure maple syrup
  • 1 cup (90g) freshly grated zucchini, patted dry

Instructions

  1. In a bowl, whisk together instant oats, whole wheat flour, baking powder, cinnamon, and salt.
  2. In another bowl, combine melted coconut oil (or butter), egg, vanilla extract, and maple syrup until mixed well.
  3. Gradually add the dry mixture into the wet ingredients and fold in grated zucchini.
  4. Chill the dough for 30 minutes in the refrigerator.
  5. Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
  6. Drop rounded scoops of dough onto the prepared sheet and flatten slightly.
  7. Bake for 11-14 minutes until lightly golden; let cool before serving.
