  • 3 cups fresh peaches, peeled and diced
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 2 large eggs
  • ¾ cup granulated sugar
  • ½ cup sour cream or plain Greek yogurt
  • ¼ cup all-purpose flour
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×13-inch baking pan by lining it with parchment paper or greasing it.
  2. For the crust, cream together softened unsalted butter and granulated sugar in a mixing bowl. Add all-purpose flour and salt until crumbly, then press into the bottom of the prepared pan. Bake for 15 minutes.
  3. While the crust is baking, mix diced fresh peaches with granulated sugar, lemon juice, and cornstarch in another bowl until well combined.
  4. After removing the crust from the oven, spread the peach mixture evenly over it.
  5. In a separate bowl, whisk together eggs, granulated sugar, sour cream (or Greek yogurt), all-purpose flour, and vanilla extract until smooth. Pour over the peach layer.
  6. Bake for an additional 35–40 minutes until set and lightly golden on top. Allow to cool completely before slicing.
