  • 12 chicken breasts
  • 2 medium potatoes, cut into wedges
  • 1 small sweet potato (optional), cut into fries
  • 2 medium tomatoes, chopped
  • 1 cucumber, chopped
  • 1 cup plain yogurt
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp chili flakes
  • 1 tsp paprika
  • Salt & pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Marinate chicken by rubbing with olive oil, oregano, garlic powder, chili flakes, salt, and pepper. Bake on a tray for 20-25 minutes.
  3. Toss potato wedges with olive oil, paprika, salt, and pepper; roast in the oven for 25-30 minutes.
  4. In a bowl, mix chopped tomatoes and cucumber; season with salt and pepper.
  5. Combine yogurt with dried mint or dill and minced garlic; chill until serving.
  6. Serve the chicken alongside roasted potatoes and salad, topped with yogurt dip.
