  • 2 and 1/2 cups cake flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 3/4 cup unsalted butter, softened to room temperature
  • 1 and 3/4 cups granulated sugar
  • 5 large egg whites, at room temperature
  • 1/3 cup sour cream or plain yogurt, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1/2 cup whole milk, at room temperature
  • 1/2 cup reduced strawberry puree
  • optional: 1–2 drops red or pink food coloring
  • 1 cup freeze-dried strawberries
  • 8 ounces full-fat brick cream cheese, softened to room temperature
  • 1/2 cup unsalted butter, softened to room temperature
  • 3 cups confectioners' sugar
  • 12 Tablespoons milk
  • 1 teaspoon pure vanilla extract
  • salt, to taste

Instructions

  1. Prepare the reduced strawberry puree by pureeing fresh strawberries and simmering until it reduces to half a cup.
  2. Preheat your oven to 350°F (177°C) and prepare two greased and lined round cake pans.
  3. In a bowl, whisk together cake flour, baking powder, baking soda, and salt.
  4. Cream softened butter and granulated sugar in a mixer until smooth, then add egg whites one at a time, followed by sour cream and vanilla.
  5. Gradually mix in dry ingredients and milk until just combined; gently fold in the reduced strawberry puree.
  6. Pour batter into prepared pans and bake for approximately 24–25 minutes or until a toothpick comes out clean.
  7. Allow cakes to cool completely before frosting with cream cheese frosting made from freeze-dried strawberries.
