  • ⅔ cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon kosher salt
  • ¾ cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 3 large eggs (room temperature)
  • 1 cup almond flour
  • ⅓ cup sliced almonds
  • ⅓ cup honey
  • ⅓ cup water

Instructions

  1. Preheat your oven to 375°F. Grease an 8” cake pan and line it with parchment paper.
  2. In a small bowl, whisk together flour, baking powder, and salt.
  3. Cream the butter and sugar in a mixer until light and fluffy. Add vanilla and almond extracts followed by whisked eggs, mixing until combined.
  4. Gradually incorporate dry ingredients until just blended.
  5. Gently fold in almond flour using a spatula until combined.
  6. Transfer batter to prepared pan and top with sliced almonds.
  7. Bake for 28-35 minutes or until edges pull away from the pan and a toothpick inserted comes out with moist crumbs.
  8. While baking, prepare honey simple syrup by heating honey and water in a saucepan until combined.
  9. Once baked, soak the cake with syrup while cooling on a wire rack.
