  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Optional: mixed vegetables, chopped green onions

Instructions

  1. Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat skillet over medium heat. Sear chicken for 3–4 minutes per side until golden brown; set aside.
  3. In a bowl, mix BBQ sauce and honey until well combined.
  4. Toast rice in the same skillet for 1–2 minutes.
  5. Add chicken broth and half of the BBQ mixture to the skillet; stir well. Return chicken to skillet and top with the remaining sauce.
  6. Cover and simmer on low for 15 minutes.
  7. Add mixed vegetables (if using) and cook an additional 5 minutes until rice is tender.
