  • 1 tbsp honey
  • 1/2 tbsp soy sauce or tamari
  • 1 cup green beans, trimmed
  • 1 garlic clove, minced
  • 1 cup baby potatoes, halved
  • Olive oil, salt, and pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss baby potatoes with olive oil, salt, and pepper. Roast cut-side down in a roasting pan for 20-25 minutes until golden brown.
  3. In a non-stick frying pan over medium heat, sauté trimmed green beans with minced garlic until tender (about 5-6 minutes).
  4. In another pan, heat olive oil over medium heat and cook salmon skin-side down for about 4-5 minutes until golden. Flip the salmon, brush with honey-soy mixture, and cook another 2-3 minutes until caramelized.
  5. Serve salmon alongside green beans and crispy potatoes; garnish with fresh parsley if desired.
