  • 2 tbsp honey
  • Juice of 1 lime
  • 1 ripe avocado, diced
  • 1 cup canned black beans, rinsed
  • 1 head romaine or butter lettuce, leaves separated
  • 1 cup corn (canned or fresh)
  • 1 cup Greek yogurt
  • 1 tbsp lime juice

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chopped chicken along with honey, lime juice, garlic, cumin, smoked paprika, salt, and pepper. Cook for about 8–10 minutes until browned.
  2. In a small bowl, mix Greek yogurt with lime juice and chipotle (or paprika) until smooth.
  3. Lay out lettuce leaves on a platter and fill each with cooked chicken. Top with avocado, black beans, corn, red onion, and cilantro.
  4. Drizzle the sauce over each lettuce cup before serving.
