  • 3 tablespoons unsalted butter
  • 2 tablespoons freshly squeezed lemon juice
  • ¼ teaspoon salt
  • 3 tablespoons apricot preserves
  • 1 tablespoon coconut sugar
  • ½ teaspoon ground cinnamon
  • Pinch of ground nutmeg
  • 1 sheet puff pastry

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Core and slice the apples into thin slices (about â…›-inch thick).
  3. In a bowl, combine apple slices with melted butter, lemon juice, and salt. Spread on the prepared baking sheet and bake for about 10 minutes until softened. Allow cooling.
  4. While cooling, grease a muffin tin with melted butter.
  5. Mix coconut sugar with remaining cinnamon and nutmeg in a bowl.
  6. Roll out the puff pastry into a rectangle, brush with apricot preserves, and sprinkle with the sugar mixture.
  7. Cut the pastry into strips (10 by 2 inches).
  8. Assemble each strip by layering apple slices along one edge, folding the bottom over, then rolling up into a rose shape and placing in the muffin tin.
  9. Bake for approximately 40-45 minutes until golden brown.
