  • 2 cups chicken broth

  • 1 ½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon thyme
  • Salt and black pepper, to taste

Instructions

  1. Season chicken breasts with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In a medium pot, bring chicken broth and salt to a boil; add rice and simmer until tender (18–20 minutes).
  3. Heat olive oil in a large skillet over medium-high heat; cook seasoned chicken for about 6–7 minutes per side until golden brown. Remove and set aside.
  4. In the same skillet, melt butter; whisk in flour and cook for about a minute. Gradually add milk and chicken broth while whisking until thickened (3–4 minutes).
  5. Stir in garlic powder, thyme, cheddar cheese, and Parmesan until melted and smooth.
  6. Return chicken to skillet and coat with sauce; simmer for another 3–4 minutes.
