  • 2 cans (15 ounces each) chickpeas
  • â…“ cup aquafaba
  • 2 tablespoons lemon juice
  • ¼ cup cold water
  • â…“ cup tahini
  • 1 tablespoon olive oil
  • ½ clove garlic
  • ¾ teaspoon salt
  • ½ teaspoon ground cumin (optional)
  • 1 tablespoon flat-leaf parsley (chopped)

Instructions

  1. Prepare the chickpeas by reserving 2 tablespoons for garnish. In a food processor, blend the drained chickpeas, aquafaba, lemon juice, garlic, and salt for about 3 minutes.
  2. Add tahini and cold water; blend again for another 2 minutes until well combined.
  3. Pour in olive oil and adjust consistency with additional water if needed. Blend for an additional 2 minutes until smooth and creamy.
  4. Transfer hummus to a serving dish. Create a well in the center and drizzle with olive oil. Top with reserved chickpeas and chopped parsley before serving.
