  • 2 1/4 cups mashed overripe bananas
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/2 cup butter
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  1. Mash the bananas until you have 2 1/4 cups.
  2. In a large bowl, mix together the flour, salt, baking soda, and nutmeg.
  3. In another bowl, cream butter with both sugars. Add in cinnamon, eggs, vanilla, and mashed bananas; stir until well combined.
  4. Fold the banana mixture into the dry ingredients gently.
  5. Pour the batter into a greased pan. Insert a trivet into the Instant Pot with 1 cup of water underneath it.
  6. Cover the pan with foil for steaming and place it onto the trivet.
  7. Seal the lid of the Instant Pot and set it to cook on manual mode for 50 minutes.
  8. Once done, do a quick release of pressure and carefully remove the pan using foil handles.
  9. Cool briefly before transferring to a wire rack to cool completely before slicing.
